I am tearing down one of two Corvair engines, vintage 1961. Now that I can see the tops of the pistons, each one has a 1/4inch diameter hole (1/4 inch deep) next to a scooped out area that ends at the piston edge. Can anyone tell me what these are for?

I believe that the 1/4 inch hole is to indicate how to install the pistions. I think the hole should be oriented toward the harmonic dampner but I would check the shop repair manual. My new Clymer's had an arrow for orientation.
IF you do not have teh manual, I woudl get one asap. There is a lot of info in it. Get a 69 with the 65 supplement.

I wouldn't worry about them as you will need to buy new forged pistons for the conversion. It will not be damage you are looking at, probably orientation marks as stated above.
My motor was srtipped for me by my friend who imported it here (UK) so I never saw the pistons.
I have seen plenty of Chevy pistons generally though so I agree with John K.
